JCS Kitchen Jamaican Christmas Cake

Everyone has their own version of the Jamaican Christmas Cake (black cake), but the JCS version is simple and guarantees the presence all the unique flavors that makes this traditional cake a favorite at Christmas time. This makes for a great Christmas gift as well, so do not hesitate to share your JCS masterpiece with the rest of the world.

 

 

Ingredients: Yield 10

 


 -½ lb. Margarine

-½ lb. Sugar

-4 Eggs

-1 tsp. JCS Vanilla/Almond flavoring

-1 lb. All-purpose flour

-1 tbsp. baking powder

-2 tsp. JCS Mixed spice

-1 tbsp. JCS Browning 5oz

-3 cups port wine (Jamaican Red Label wine is good too)

-1 cup rum (more if desired)

-3 cups soaked mixed fruits

-½ cup cherries


Method:

  1. In a large bowl, cream together margarine and sugar.

  2. Slowly beat eggs into the mixture and add the Vanilla or Almond flavoring

  3. In a separate bowl, combine flour, baking powder and mixed spice

  4. Mix in the dry mixture to the creamed mixture with the browning, fruit wine, soaked mixed fruits and cherries

  5. Preheat oven to 350degrees. Grease and line baking tin

  6. Bake for roughly 1 ½ hrs or until inserted skewer/toothpick comes out clean

  7. Let cool and enjoy
